Cowboy beans are a straightforward one-pot meal that combines beans, bacon, and ground beef in a smoky tomato sauce. The recipe works in a Dutch oven over a campfire or on a stovetop in an RV.

Ingredients (serves 6–8)

4–6 slices bacon (chopped), 1 pound ground beef, 1 onion (diced), 2–3 cans beans (pinto, kidney, or a mix, drained), 1 can diced tomatoes or tomato sauce, 2–3 tablespoons brown sugar or molasses, 1–2 tablespoons Worcestershire sauce or smoked paprika, salt, pepper, and optional chili powder or hot sauce.

Method

In a Dutch oven or large pot over medium heat (campfire or stovetop), cook the bacon until crisp. Remove and set aside, leaving the drippings. Cook the ground beef with the onion to 160°F, checked with a food thermometer. Drain excess fat if needed. Return the bacon to the pot. Add the beans, tomatoes, brown sugar, Worcestershire or smoked paprika, salt, and pepper. Stir well. Simmer 20–30 minutes, stirring occasionally, until the flavors come together and the sauce thickens slightly. Taste and adjust seasoning. Serve hot. USDA guidance

Canned beans keep the recipe simple for camping. The dish holds well and can be made ahead and reheated. A little extra smoked paprika or a dash of liquid smoke deepens the flavor if desired.

For make-ahead meals, refrigerate in shallow containers within 2 hours (1 hour above 90°F). Keep at 40°F or below, use within 3–4 days, and reheat to 165°F. USDA leftover-safety guidance
