This version keeps everything in one cast-iron skillet. The filling cooks on the stovetop, then biscuit dough goes on top and the skillet finishes in the oven. It is straightforward and works well when you want a comforting meal without multiple pans.

Ingredients (serves 4)

For the filling: 1–1½ pounds cooked chicken (shredded or diced), 1 small onion (diced), 2 carrots (diced), 2 celery stalks (diced), 2 tablespoons butter, 2 tablespoons flour, 2 cups chicken broth, 1 cup milk or half-and-half, 1 cup frozen peas, salt, pepper, and optional thyme. For the topping: 2 cups biscuit mix, milk as directed on the package (or use refrigerated biscuit dough).

Method

Heat the oven to 400°F. In a 10- or 12-inch cast-iron skillet over medium heat, melt the butter and cook the onion, carrots, and celery until softened. Stir in the flour and cook 1 minute. Gradually whisk in the broth and milk. Simmer until thickened. Add the chicken, peas, salt, pepper, and thyme. Taste and adjust seasoning. If using biscuit mix, stir it with the milk to form a soft dough and drop spoonfuls over the filling. If using refrigerated biscuits, arrange them on top. Bake about 15–20 minutes, or longer as needed, until the biscuits are cooked through and the center of the filling reaches 165°F on a food thermometer. Let rest a few minutes before serving. USDA guidance

Using already-cooked chicken keeps the process shorter. The skillet moves from stovetop to oven, so use a dry oven mitt when handling it; do not put a non-oven-safe handle cover in the oven. Leftovers reheat well covered.

For make-ahead meals, refrigerate in shallow containers within 2 hours (1 hour above 90°F). Keep at 40°F or below, use within 3–4 days, and reheat to 165°F. USDA leftover-safety guidance
