Skillet Peach Cobbler for Your Next Kentucky Camping Trip

This skillet peach cobbler uses fresh or canned peaches and a simple topping. It can be baked in an oven or cooked more slowly over a campfire or camp stove with a lid. It is a practical dessert for camping trips in the Barren River Lake area.
Ingredients (serves 4–6)
4–5 cups sliced peaches (fresh or drained canned), 1/2 cup sugar (adjust to taste), 1 tablespoon cornstarch or flour, 1 teaspoon cinnamon, 1 tablespoon lemon juice (optional), 1 cup biscuit mix or self-rising flour, 1/2 cup milk, 2 tablespoons melted butter, and extra butter for the skillet.
Method
Toss the peaches with sugar, cornstarch, cinnamon, and lemon juice. Melt a tablespoon of butter in a cast-iron skillet over medium heat (or in a 375°F oven). Add the peach mixture and cook until the juices begin to thicken. Stir the biscuit mix, milk, and melted butter into a soft batter. Drop spoonfuls of batter over the peaches. Cover the skillet and cook over low campfire coals or on a camp stove for 20–30 minutes, or bake uncovered in a 375°F oven for 25–30 minutes, until the topping is fully cooked; it may stay pale with covered stovetop cooking. Campfire heat varies, so allow extra time if the center is still doughy. Let rest a few minutes before serving.
Fresh peaches work well in season; canned peaches are reliable for camping. If cooking over a fire, keep the heat moderate and check occasionally so the bottom does not scorch. Serve warm, plain or with a scoop of ice cream if available.
