Homemade Bourbon Barbecue Sauce for Ribs, Burgers, and Pulled Pork

This barbecue sauce uses bourbon for depth and can be made ahead. It is practical for ribs, burgers, or pulled pork and travels in an ice-filled cooler kept at 40°F or below for camping trips.
Ingredients (makes about 2 cups)
1 cup ketchup, 1/4 cup bourbon, 1/4 cup brown sugar, 2 tablespoons apple cider vinegar, 1 tablespoon Worcestershire sauce, 1 teaspoon smoked paprika or chili powder, 1/2 teaspoon garlic powder, salt, and black pepper. Optional: a dash of hot sauce.
Method
Combine all ingredients in a saucepan. Bring to a simmer over medium heat, stirring occasionally. Reduce heat and simmer 10–15 minutes until slightly thickened. Taste and adjust sweetness, acidity, or spice. Use immediately, or refrigerate promptly in a shallow container and use within 3–4 days; freeze for longer storage. USDA guidance
How to Use It
Brush on ribs or chicken during the last 10–15 minutes of grilling. Use as a topping for burgers or mix into pulled pork. Some alcohol remains after simmering. For children or anyone avoiding alcohol, replace the bourbon with apple juice or water. USDA alcohol-retention data
Making the sauce at home and packing it in a jar saves time at the campsite. It pairs well with simple grilled meats and requires no special equipment beyond a saucepan.
