Peach-Bourbon Glazed Chicken Thighs for the Grill or Skillet

This glaze combines peach preserves or fresh peaches with a splash of bourbon. It finishes chicken thighs on the grill or in a skillet and uses ingredients that travel reasonably well.

Ingredients (serves 4)
8 chicken thighs (bone-in or boneless), 1/2 cup peach preserves or mashed fresh peaches, 2–3 tablespoons bourbon, 1 tablespoon butter, 1 tablespoon apple cider vinegar or lemon juice, salt, pepper, and optional pinch of cayenne or garlic powder.
Method
Season the chicken thighs with salt and pepper. Grill over medium heat or sear in a cast-iron skillet until nearly cooked through. While the chicken cooks, combine the peach preserves, bourbon, butter, and vinegar in a small pan. Simmer a few minutes until slightly thickened. Brush the glaze over the chicken during the last few minutes of cooking, turning once so it caramelizes without burning. Cook until a food thermometer in the thickest part of each thigh, away from bone, reads at least 165°F. Let rest a minute before serving. USDA guidance
Peach preserves are convenient for camping; fresh peaches work when in season. Simmering does not reliably remove all alcohol. For anyone avoiding alcohol, replace the bourbon with peach juice or water. Apply the glaze late so it does not scorch on high heat. USDA alcohol-retention data
