These breakfast burritos are assembled at home, wrapped, and kept cold until you are ready to reheat them at the campsite. They work well over a campfire grate or on a camp stove and require almost no morning prep.

Ingredients (makes 4–6 burritos)

6–8 eggs, 1/2 pound breakfast sausage or fully cooked diced ham, 1 small onion (diced), 1 bell pepper (optional, diced), 1 cup shredded cheese, 4–6 large flour tortillas, salt, pepper, and optional salsa or hot sauce. Aluminum foil for wrapping.

Make-Ahead Method

Cook raw pork or beef sausage to 160°F, or poultry sausage to 165°F, checked with a food thermometer. If using fully cooked ham, warm it in the skillet instead. Add the onion and pepper and cook until softened. Scramble the eggs in the same pan until firm, with no runny egg remaining, and season with salt and pepper. Warm the tortillas so they are pliable. Divide the filling among them, add cheese, roll tightly, and wrap each burrito in foil. Refrigerate promptly in a single layer rather than a deep stack; do not wait for them to cool to room temperature. Refrigerate within 2 hours of cooking, or 1 hour when the temperature is above 90°F. Keep at 40°F or below for up to 2–3 days, or freeze for longer storage. USDA temperature guidance FDA cooking and storage guidance

Campfire Reheating

Place the foil-wrapped burritos on a grate over medium campfire coals or in a skillet on a camp stove. Heat for about 10–15 minutes, turning occasionally, then check the center of each burrito with a food thermometer; continue heating until it reaches 165°F. Frozen burritos need extra time. For easier reheating, thaw overnight in the refrigerator before departure. Open carefully to avoid hot steam and add salsa if desired. FDA reheating guidance

Assembling the burritos at home saves time and cleanup at the campsite. Transport and store them in an ice-filled cooler at 40°F or below, checked with a cooler thermometer, until ready to heat. Use moderate heat and turn frequently to reduce scorching while the center warms. FDA cooler guidance
