Foil packets keep everything contained and make cleanup easy at a campsite. This version uses steak, potatoes, and a simple garlic-butter mixture cooked over campfire coals.

Ingredients (serves 2–4)

1–1½ pounds steak (sirloin or similar, cut into bite-size pieces), 3–4 medium potatoes (thinly sliced or diced), 3–4 tablespoons butter, 2–3 garlic cloves (minced), salt, pepper, and optional onion slices or herbs. Heavy-duty aluminum foil.

Method

Tear sheets of heavy-duty foil large enough to fold into sealed packets. Divide the potatoes among the sheets and season with salt and pepper. Add the steak pieces on top. Mix the softened butter with the minced garlic and place a portion on each packet. Fold the foil tightly to seal, leaving a little room for steam. Place the packets on a grate over medium campfire coals (or on a grill over the fire). Cook 20–30 minutes, turning once halfway, until the potatoes are tender and a food thermometer inserted into the center of the largest steak pieces reads at least 145°F. Rest for at least 3 minutes before eating. Open carefully—steam will be hot. USDA guidance

Thinner potato slices cook faster. If the fire is very hot, move the packets to a slightly cooler spot to avoid burning the bottom. The packets can be assembled at home and kept at 40°F or below until cooking time. USDA guidance
